I’m venturing outside my typical Arkansas wedding photographer posts today and sharing my pb no-bake cookie recipe. I remember the first time I had peanut butter and chocolate no-bake cookies. My Grandma Benfield made a batch, and I watched as she melted and swirled butter in the sauce pot she was using. Unfortunately, that was the only part of the recipe I remembered until the scooping part at the end. The recipe is gone, but I’ve done pretty well recreating it. I’ll share my pb no-bake cookie recipe that Scout and I made today with you below.
I love recipes I can make with Scout This recipe is simple. It can be made in a single pot, requires no baking, and is virtually impossible to mess up. Not only that, but you can also customize it a million different ways. Add sriracha into the mix for a kick. Swap out the oat milk for chocolate oat milk and kick up the chocolate flavor. Instead of vanilla extract, use peppermint for a holiday twist. The possibilities are endless!
Ingredients needed for pb no bake cookie recipe
1 cup peanut butter (creamy or crunchy… your call)
3/4 cup brown sugar
3 cups of traditional oats
3/4 cup granulated white sugar
1 stick (1/4 c) unsalted butter (or treat yourself with this high end french butter)
1/4 c cocoa powder
1 tsp vanilla extract
1/2 c oat milk (this one is my favorite)
pinch of salt
Instructions to recreate this pb no bake cookie recipe
In a pot, melt butter over medium heat. Then, add both sugars, cocoa powder, and oat milk. Whisk to break up any clumps. Heat just until the first boil, then immediately remove from heat. Add peanut butter and vanilla. Stir until peanut butter melts and is fully incorporated into the mix. Then, add the oats and stir until well-mixed (all oats should be coated with the mixture). Spoon onto parchment paper. Sprinkle with salt (optional, but I love it!). Let the cookies cool and set. Once set, enjoy!
